Three ingredient recipes are great not only because they are usually super easy, but because you probably have all the ingredients at your house already. That means no need to stop at the store on the way home. That means you won’t be tempted to stop for take out instead of stopping at the market.

Cooking at home is an easy way to help stay within your daily calorie limits, which helps keep you on track for weight loss after your gastric sleeve, gastric bypass, or lap band surgery. While take out dishes are tasty, they are also usually high in calories. Some take out meals may even have more calories in a single serving than bariatric patients should eat in one day! Right now, three ingredient recipes should be looking even more awesome.

This recipe is for salmon, which provides high quality protein as well as healthy omega 3 fatty acids. Fresh wild salmon would be a great choice, but frozen wild salmon can easily be substituted after defrosting in cool water. If you don’t have a fresh lemon, refrigerated lemon juice can be used.

Lemony Italian Salmon

  • 4 salmon fillets
  • ¼ cup lemon juice (about ½ of a lemon)
  • 2 tsp Italian seasonings
  • Salt and pepper, to taste

Directions:

Place salmon skin side down in a baking dish or pan. Squeeze or pour lemon juice over salmon fillets. Sprinkle with salt, pepper, and Italian seasonings. Preheat oven to 500 degrees while the salmon marinates. Bake for 10 minutes, or until cooked through.

This salmon pairs nicely with a baked sweet potato, asparagus, cucumber and tomato salad, or even brown rice. Any leftover salmon can be flaked with a fork and mixed in with a green salad for a quick and delicious lunch the following day.
