Need something quick to have with dinner? This tasty tomato and avocado salad is not only quick, but it’s healthy and low carb.
 
For gastric sleeve, gastric bypass, and lap band patients who are in the post bariatric surgery diet stage allowed to eat high protein meals plus vegetables and fruits, this salad can be a great addition to the protein of your choice. It can pair well with chicken, pork, beef, or fish as your protein, and can easily be for lunch or dinner, or even a snack if you love avocado.
 
It’s surprising to so many people on a weight loss diet that you can eat a high fat food like avocado and still lose weight. Avocados are high in fat and calories, but eating them in the  right portions can make them work. They are full of heart healthy fats and also fiber, which can help you feel fuller for longer.
 
For bariatric patients with diabetes, this salad is great because it is low in carbohydrates and high in fiber, which can help prevent spikes in your blood sugar. Both the avocado (which is rich in omega 3 fatty acids, vitamin E, and fiber) and the tomato (filled with vitamins A and C and potassium) are heart healthy foods, which is important as diabetics are at a higher risk of heart disease.
 
Tomato and Avocado Salad
 
  • 1 large tomato, diced
  • 1 avocado, diced
  • ½ small red onion, chopped
  • Olive oil drizzle
  • Juice from 1 lime
  • Salt
  • Sprinkle of cilantro (optional)
 
Directions:
 
Combine tomato, onion, and avocado in a bowl. Drizzle with olive oil. Roll the lime on a counter or table until soft, then squeeze the juice into the bowl. Add salt to taste and add in cilantro (if using). Mix everything gently and serve.
