This recipe for Creole Shrimp could quickly become one of those recipes. It’s high in protein, which is good for bariatric patients and people at a healthy weight alike, and lower in calories than many take out meals. Most of the ingredients are staples in many kitchens or only require a quick stop at the regular grocery store on the way home. Once the shrimp are thawed, this recipe cooks up quickly, which is perfect for busy parents. Also, you can serve it with the sides your family likes best in order to please your crowd. Grits would work well, as would brown rice, cauliflower rice, or quinoa
- 1 lb frozen, uncooked, cleaned shrimp, thawed
- 1 tbsp cajun seasoning
- ¼ cup Sun Dried Tomato Salad dressing
- 2 cloves garlic, minced
- 1 tbsp fresh chopped parsley
- Heat skillet on medium heat.
- Toss shrimp with cajun seasoning in a resealable plastic bag to coat.
- Add dressing and garlic to skillet, cook 1 minute.
- Stir in shrimp. Cook 2-3 minutes, or until shrimp turn pink.
- Transfer to a dish and sprinkle with chopped parsley.
